Hummus is great, but i like to experiment (at least a little). So I added to the classic recipe also a black and red lentil & peas and dried tomatoes to make to the taste even better. And it was incredible! With some veggies and roasted bread is your foodgasm guaranteed.
And you should also try my favourite eggplant mash with egg and cinnamon.
INGREDIENCES:
1 Big eggplant
1 Egg
1 Tomato passata
1/2 tea spoon cinnamon
1 Clove of garlic
(plus sugar - if needed)
HOW TO DO THAT:
Roast the eggplant in the oven until its peals is wrinkled. Then peel it and mash the inside in a mixer. Then put finely cut garlic to the pan and fry it together with eggplant. Add passata and boil. After few minutes of boiling turn the flame down and add an egg to the edge of the pan, fold it slowly in. Turn off the flame and the cinnamon. Serve with almonds on top.
